Hot Vegetarian Bagel Sandwich

INGREDIENTS

For the OMM Hot Feta Spread
1 cup crumbled feta (about 6 oz) 
¼ cup pickled jalapeno slices, drained and chopped 
1 tsp. dried oregano 
Kosher salt and freshly ground black pepper 
¼ cup olive oil, more as needed 

For the Smashed Avocado  
1 ripe avocado 
1 Tbs. fresh lemon juice, more as needed 

For the Sandwiches 
2 One Mighty Mill Whole Wheat Plain Bagels, to taste  
1 Tbs. olive oil 
4 large eggs  
¾ cup roasted broccoli florets  
½ roasted red pepper, thinly sliced 

   

 
 INSTRUCTIONS

  1. Make the feta spread: Add the feta, jalapeno, oregano and ½ tsp. each salt and pepper to a food processor and, while processing, add the oil in a thin steady stream until the mixture becomes smooth and uniform. Add more oil and process as needed.
  2. In a small bowl, mash the avocado with the lemon juice and ½ tsp. salt. Add more lemon and salt to taste.
  3. Heat a 12-inch skillet over medium heat for 2 minutes. Add the oil and once it’s shimmering hot, add the eggs and sprinkle with salt and pepper. Cook until the eggsset, about 2 minutes, then flip and cook until the eggs just cook through, about 2 more minutes. Add the broccoli and peppers to reheat.
  4. To assemble the sandwiches, spread the feta and avocado spreads on both sides of the bagels. Top with the eggs and vegetables and serve immediately.
