ASMR Mighty Tacos
Kind of like a green flash at sunset, there is a magical moment when you griddle our fresh-milled tortillas just right so that they puff up and bubble and their texture achieves a perfect chewy/crispy balance. All you need is a heavy based pan and about 1 minute of time. And then you can wrap your fresh-griddled tortillas with all sorts of quick meal preps. -Chef Tony
INGREDIENTS
6 oz. chorizo
2 Tbs. olive oil
4 eggs, scrambled
½ cup shredded sharp cheddar
Kosher salt and freshly ground black pepper
¼ cup fresh cilantro leaves
1 avocado, diced
½ lime, cut into wedges
2 tortillas
Your favorite hot sauce as a garnish
INSTRUCTIONS
- Brown the chorizo: Heat a heavy based skillet
- Scramble the eggs:
- Return chorizo and cheese to the pan
- Griddle the tortillas, wrap and roll
